Avocado Salad

Ingredients

  • 150g Roma tomatoes

  • 150g mushrooms

  • 1/2 medium red onion sliced

  • 2 avocados diced

  • 2 Tbsp extra virgin olive oil

  • Juice of 1 medium lemon about 2 Tbsp

  • 2 Tbsp balsamic vinegar

  • 1/2 bunch romaine lettuce

  • 1/2 cup rocket leaves

  • 1 tsp sea salt or 3/4 tsp table salt

  • 1/8 tsp black pepper

  •  

    Handful of chopped Tigernuts

     

     

     

     

     

     

     

     

Instructions

 

  1. Place chopped tomatoes, mushrooms, sliced red onion, diced avocado, romaine lettuce and rocket into a large salad bowl.

  2. Drizzle with 2 Tbsp olive oil and 2 Tbsp lemon juice

  3. Add chopped Tigernuts and drizzle with balsamic vinegar

  4. Toss gently to combine. Just before serving, toss with 1 tsp sea salt and 1/8 tsp black pepper.
